A well-known chef who worked at one of 's most prestigious restaurants is seeking to have his bail conditions changed as he fights a charge of rape.

Kelvin Zachary Andrews is facing a single charge of rape, which police allege stems from an incident at an up-market hotel in Brisbane's Fortitude Valley, in March last year.

On Monday, he did not appear before Brisbane Magistrates Court when his matter was briefly mentioned before Deputy Chief Magistrate Anthony Gett.

A lawyer acting on his behalf said a submission had been sent to the prosecutor's' office which was still being considered.

A Queensland Police prosecutor told the court legal officers had spoken to the complainant on January 17 and a two week adjournment was needed for their office to provide a response.

Mr Andrews' lawyer also asked for a further hearing to allow Mr Andrews to vary his bail.

Magistrate Gett granted the adjournment until February 5 but ordered a further bail variation hearing on February 13.

Mr Andrews was ordered to appear in person on that date.

Until his resignation in mid-2023, Mr Andrews was formerly the head chef at the luxury Fortitude Valley steakhouse SK Steak & Oyster.

He was also one of the founding members of Australian-based restaurant group STK Group, alongside co-founders by Simon Gloftis, Theo Kampolis.

Mr Andrews, 32 has not entered a formal plea to the charge.

, his lawyer indicated Mr Andrews denied the charge and would contest it.
